The CLI Command Reference and User Guide will be useful to you. Some things do not translate from BOSS to EXOS such as VLACP is not supported.
I find the Extreme Knowledge Base articles useful for finding examples.
Take care when configuring VLANs and Spanning Tree as you need to auto-bind VLANs to the STPD S0 (default MSTP instance) if you want to keep STP enabled on ports you make members of new VLANs.
There is a lot more to consider but I would go through the ERS running config and use the above to see if this gets you started. The flash can store multiple configs.
Link aggregation Groups (LAGs) are the equivalent for MLT. Just configure a sharing group with L2 hashing for basic LAG.
Stacking is done using front stacking ports and there is an option called easy setup when enable stacking, select this and it will simplify forming your stacks. Create a daisy chain or ring topology.
